This time of year, holiday desserts are all around us. And they are oh so tempting! But many of us tend to avoid these delicious treats because of the way all that sugar makes us feel. Sure it tastes good, but the sugar hangover is real. That’s why Kuli Kuli created SuperBark. MORINGA RASPBERRY MUG CAKE

INGREDIENTS:

1/4 cup oat flour

2 tsp Pure Moringa Powder

1/2 tsp baking powder

1/2 mashed banana

2 tbsp unsweetened almond milk

6-7 fresh raspberries

Raspberry Chia SuperBark

DIRECTIONS:

  1. Mix the dry ingredients together
  2. Mix the wet ingredients together
  3. Then combine the dry and wet ingredients to make a batter
  4. Fold raspberries into the batter
  5. Then spoon into a mug or bowl
  6. Place raspberries and SuperBark on top
  7. Bake at 350F for 15-20 min or microwave for ~1min 30sec.

As a personal chef with an eye on nutrition, I am always looking for ways to make recipes that are healthy and satisfying. My name is Katie Simmons and I’m a professional chef based in Chicago. Many of my clients love the convenience and satisfaction of baked goods, especially muffins and bread. It’s so much easier to pack a Banana Walnut muffin for their commute to work, rather than trying to eat a spinach salad.

And when it comes to kids, they are often more likely to gobble up a Green “Boo-Berry” Goblin pancake than to dive into a bowl of kale. This is one of the reasons I was so excited to come across the moringa powder. One little packet (10g) packs 3 g of fiber and 3 g of protein! Plus, there’s Vitamin A, calcium, and Iron–all essential for a healthy diet. It’s like a multivitamin in a leaf.

Super-Green Your Baking: 4 Tips for Using Moringa Powder

Essentially, what I love most about moringa is that I can “amp-up” the nutrition in my breads and muffins by simply adding it to any recipe. I’ve been using this super-green powder in my baking for a few months now. Here are a few tricks I’ve learned, for successful with Moringa powder baking.

1. Remember the color – It’s GREEN!

I’ve made muffins for kids who loved this green color, while I’ve seen adults scowl at it. You have two options here: embrace the color or hide it. If you’re embracing it, flavor your muffins with mint extract for a “Super-Minty” muffin. If you’re hiding it, use the powder in chocolatey recipes like brownies or chocolate muffins.

I love the color, and how I don’t have to add artificial dyes to my recipes in order for a visual delight.

2. Start with a little moringa

Start by substituting just 2 tbsp. of your flour with the Moringa powder. Make sure you like the taste and the texture holds up before adding more. For an entire recipe, say 12 muffins, with 2 tablespoons of moringa powder, each muffin is getting between 1/2 teaspoon – 1/3 teaspoon of moringa. That’s a great moringa serving size for kids.

They’ll get a good dose of “sneaky greens” while not being turned away from a “veggie” taste. Although if your kids love the taste of veggies, then half your work is already done! If that’s making you wonder How Often You Should Eat Moringa, Kuli Kuli offers a comprehensive article on that too.

3. Follow the Fourth 

A general rule of thumb when substituting flour is to only swap out ¼ of the mix. For example, for a recipe that calls for 1 cup of wheat flour, you can use up to ¼ cup of Moringa powder + ¾ cup wheat flour. If you add more than this, the batter probably won’t get has much rise and have the texture you want. Hence the saying “follow the fourth.”

4. Sift with the dry ingredients 

Add the moringa powder to your dry ingredient mix and sift everything together. It’s important to do this before integrating any wet ingredients, like eggs or butter.

This sifting will help ensure the powder is evenly mixed in the batter, and also help you avoid any clumping of moringa.

Now it’s time to roll up your sleeves and get baking! Here are four quick ideas to get you inspired:

For cookies, add mint extract and mini chocolate chips for “Mint Chocolate Chip Cookies.” In pancakes, add to your pancake mix with blueberries for Green Goblin “Boo-Berry” Pancakes.

In bread, add moringa to zucchini bread to amp-up the green color. In brownies, sneak into chocolate brownies. No one will know they’re getting in their daily greens while enjoying your delicious treat. Bring this fall favorite to life this holiday season — It’s Moringa Sweet Potato Pie!

Ingredients 

Pastry Dough – Single Crust

– 1 ½ cups unbleached all purpose flour (less because of moringa powder)
– ½ tbsp Pure Moringa Powder
– 2 tbsp sugar
– ¼ teaspoon fine salt
– ½ cup (1 stick) cold unsalted butter
– ¼ cup ice cold water
– 1 tsp cold canola oil

Pie Filling

– 4 to 5 medium sweet potatoes (2 ¼ cups cooked and mashed)
– 1 cup light cream or half-and-half
– ½ tbsp Pure Moringa Powder
– ⅓ cup sugar
– ⅓ cup light brown sugar
– 3 large eggs
– 1 ½ tsp unsalted butter melted
– ½ tsp ground cinnamon
– ½ tsp ground mace
– ½ tsp pure vanilla extract
– ¼ tsp salt

Directions

1. Prepare the pastry. Roll the pastry and line a 9-inch pie plate with the bottom crust. Roll out the remaining dough for the top crust. Chill the pastry and partial-bake.

2. Preheat the oven to 400 degrees Fahrenheit.

3. Bake the sweet potatoes until tender all the way through, about 1 hour. Set aside and let cool.

4. Remove the sweet potato flesh and puree or beat until smooth.

5. Whip the eggs in a bowl until frothy. Add the sweet potatoes, sugars, Pure Moringa Powder, cinnamon, mace, vanilla, butter and salt. Mix until smooth.

6. Slowly pour the mixture into the cooled pie shell.

7. Reduce the oven temperature to 350 degrees Fahrenheit.

8. Set the pie on the center oven rack and bake for 30 minutes, turn the pie 180 degrees. Continue baking until the center is set and the edges start to rise, about another 20 minutes.

9. When ready the filling will be firm. The edges of the filling may puff up a little. You shouldn’t see much browning if any on pie filling.

10. Transfer the pie to cool. Serve slightly warm or at room temperature.

Our partners at Kellogg’s NYC cafe are getting in the Saint Patrick’s Day spirit with new green moringa snacks! Not in NYC? No worries. Their professional chefs shared their recipes so you can make these treats no matter where you are.

These shamrock shaped Moringa Rice Krispie Treats are sure to be a big hit with kids and adults alike who are getting in the festive spirit. For those looking for a healthier option, check out these Moringa Banana Smoothie Bowls.  Both items will be served at Kellogg’s NYC cafe starting St. Paddy’s Day through all of April in celebration of Earth Month

Ingredients to make your Moringa Rice Krispies Treat:

3 tablespoons butter

4 cups marshmallows

6 cups Rice Krispies cereal

2 tablespoons Kuli Kuli moringa powder

½ cup dark chocolate chips

Some simple steps:

1.       In a large bowl, microwave the butter and marshmallows together until very fluffy. Stir in the Rice Krispies and Kuli Kuli moringa powder.

2.       Spray a baking sheet with non-stick spray. Press the mixture into the pan. Set aside to cool.

3.       Using a shamrock cookie cutter, punch shamrocks out from the Rice Krispies sheet.

4.       Melt the chocolate in the microwave at 50% power in 30-second intervals until fully melted. Dip the edge of the shamrocks in the melted chocolate and place on parchment paper. Refrigerate until set and then store in an airtight container.

Our favorite part of the winter season is gathering around with those we love and celebrating the holidays over good food and company. Whether you join your friends for a festive night in, or your family for a more intimate affair, one thing is for sure – there’s bound to be lots of delicious food and tasty drinks.

We’re not one to show up to a party empty handed and this year we’ll be wowing guests with this savory holiday star bread! It’s not only delicious, with the mixture of pesto and moringa, but it is absolutely beautiful too.

The recipe can be made from scratch ahead of time and baked the day of – or you can use store bought dough for an extremely quick-and-easy preparation.

We love this season of togetherness and nothing brings us together quite like food.

Ingredients:

  • 2lbs of white bread* (I used this recipe)
  • 4 Tbs pesto
  • 2 tsp Pure Moringa powder
  • Egg wash (1 egg + 1tbs water)

Directions:

  1. Make the dough then let it rise for at least an hour. We are using the recipe linked above to make the dough. You are more than welcome to substitute in a different recipe if you prefer.
  2. Roll out the dough. Divide the dough into 4 equal pieces then roll into balls. Let them rest for 20 minutes. In a small bowl, mix together the pesto and moringa powder until well incorporated. Flour your workspace then roll each ball into 10” circles.
  3. Stack the dough. Place the first circle onto a parchment lined cookie sheet, then spread ⅓ of the pesto mixture on top. Place another circle on top of the first and spread more pesto. Repeat this step with the next circle too then place the last circle on top.
  4. Shape the star bread. Place a round cookie cutter in the center of the circle then using a pizza cutter or bench scraper cut 16 strips all the way around (should look like sun rays). Take two pieces of dough, and twist them away from each other 2-3 times then pinch the ends together. Repeat around the whole circle. This will create the 8 tips for your star. Remove the cookie cutter.
  5. Rest then bake. Cover the star and let rise for 25 minutes. Preheat the oven to 400F and prepare your egg wash. Once the star has risen, brush it with egg wash then bake in the oven for 20-25 minutes. Let cool 10 minutes before serving and its is best served warm the same day.

Optional: *You could use store bought dough like crescent rolls.

Who doesn’t love decorating cookies during the holidays? And what if we said you could sneak a little extra nutritious goodness into a classic recipe? This moringa frosting is a beautiful and delicious way to add a little green boost to your holiday treats!

The added bonus of this recipe is that it doesn’t use any food coloring. The green color is completely natural and comes from the moringa! But that doesn’t mean you can’t try mixing it up with other flavor extracts, spices, or food coloring for some variety.

Use this recipe to decorate you favorite holiday cookies, cakes, or as a glaze for cinnamon rolls!

Moringa Superfood Frosting with Kuli Kuli

 

Ingredients

  • ½ cup powdered sugar
  • 1 tsp Organic Pure Moringa Powder
  • ¼ cup salted butter, softened (sub coconut butter for vegan option!)
  • 2 Tbsp unsweetened almond milk (any milk works!)
  • A few drops of peppermint extract (optional)

Directions

  1. In a mixing bowl, combine powdered sugar, moringa, and butter.
  2. Whisk in milk and peppermint extract (if desired)
  3. Check the consistency and add more milk or powdered sugar if necessary
  4. Decorate cookies or use as a glaze for other desserts!

Moringa Brings the Green to These Holiday Cookies!

Nothing is as inviting or festive as a fresh batch of chocolate chip cookies holidays! I’ve been working on this vegan cookie recipe for years and I guarantee that you and your party guests will not be disappointed. They are my ideal chocolate chip cookie: crispy on the outside and soft and mushy on the inside.

In this version, I use moringa powder to add an evergreen tinge and an extra dose of wintery wonder to a holiday classic. I absolutely love them right out of the oven when the chocolate is still warm and melting, but they taste fabulous at room temperature as well!

Moringa powder gives these cookies an evergreen tinge.

And there’s and added bonus – they’re gluten-free! I’ve found that gluten-free flours tend to give the best texture and makes it super simple if you are entertaining people with different dietary restrictions. I’ve found that sweet white rice flour gives the best results, but white rice flour will work well if you can’t find the sweet white rice flour. This recipe also calls for oat flour, which you can make yourself by blending one cup of old-fashioned oats in a food processor until you form a fine powder.

Gluten-free flours give these cookies the best textures.

For the liquid, I use a blend of chickpeas and aquafaba (the liquid that comes with a can of chickpeas). All you do for this part is dump a whole can of chickpeas (liquid and all) into a food processor and blend until mostly smooth.

For the rest of this recipe, I keep the dough in one large bowl. It’s way more fun to be frolicking in the snow with your friends or munching on these cookies by the fireplace than doing a sink full of dishes. Also, you can eat the raw dough and won’t have to worry about salmonella because there are no eggs. Just be warned – the dough is very addicting!

These cookies are vegan, so you don’t have to worry about salmonella when you taste test the dough.

 

Ingredients

  • 1 cup oat flour
  • ½ cup sweet white rice flour
  • ½ cup brown rice flour
  • ¾ cup coconut or date sugar
  • 1 tsp baking powder
  • 1 ½ Tbsp Kuli Kuli Pure Moringa Powder
  • 1 (15-oz) can of chickpeas (keep the liquid!)
  • 1 tsp vanilla extract
  • 1 cup vegan semi-sweet chocolate chips + more for adding to the tops of the cookies.

Directions

  1. Preheat the oven to 350°F and line two cookie sheets with parchment paper or a silicon mat.
  2. In a large mixing bowl, stir together the oat flour, white rice flour, brown rice flour, coconut/date sugar, baking powder, and moringa powder until well combined.
  3. Form a well in the center
  4. Blend the chickpeas and their included liquid (aka aquafaba) in a food processor until mostly smooth.
  5. Pour the chickpea mixture into the well of the dry ingredients and pour the vanilla extract on top of the chickpea mixture.
  6. Stir the wet ingredients into the dry ingredients so that a dough forms. Gently fold in the chocolate chips.
  7. Using your hands, form small cookie-sized balls of dough and place them on the cookie sheet about an inch apart from each other. Flatten the balls of dough with your fingers. You might want to add a few extra chocolate chips to the tops of each cookie to make sure they have that irresistible chocolate chip cookie look.
  8. Bake the cookies in the oven for 12 to 15 minutes.
  9. Remove the cookie sheet from the oven and let cool for about 5 minutes before eating or serving.

Adorable & Healthy Moringa Vanilla Date Scones

I’ve been obsessed with scones for a while, it might be their cuteness, it might be their portable-ness, it might just be that they go great with hot beverages. No matter the reason, they are fun to eat, totally fancy, and perfect for a fall baking adventure.

Originally, I was using matcha powder for this recipe, but since working with Kuli Kuli as a field marketer, I’ve learned that moringa has 5 times as much protein, 21 times as much calcium, and 11 times as much iron as matcha. I also really like that moringa powder is caffeine free. I am a runner, so staying hydrated is important to me and I often find myself feeling dehydrated after consuming too much caffeine.

I’ve used chickpeas and aquafaba for the egg replacement. If you’re wondering what aquafaba is, it’s just the liquid that comes from a can of chickpeas. I’ve found that this method works well for baked good and gives you the added benefit of sneaking bean nutrients into dessert.

In addition to their nutrient density, these scones are great for social gatherings that involve people who have food restrictions. I follow a whole-food, plant-based diet, so these scones are 100% vegan and because I like feeding friends who cannot eat gluten or nuts, these are also gluten and nut free.

I like decorating these with a fruit leather star, which gives them a new level of quirky cuteness, but you could  decorate them any number of ways, like with chocolate chips or freeze-dried strawberries.

Ingredients

  • 3 cups of oat flour (old fashioned oats blended in a food processor)
  • 1 tsp baking powder
  • ½ cup date sugar
  • 2 Tbsp Kuli Kuli Organic Pure Moringa Vegetable Powder
  • 1 (15-oz) can of chickpeas with the liquid (aquafaba)
  • 1 tsp vanilla
  • 3 Tbsp maple syrup
  • ½ cup chopped dried dates
  • Fruit leather (optional)

Recipe makes 8 scones

Directions

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper or silicon mat.
  2. In a large mixing bowl, stir together the oat flour, baking powder, date sugar, and moringa powder until well combined. Then, form a well in the center of the dry ingredients.
  3. In a food processor, puree the can of chickpeas with its liquid until a smooth paste forms.
  4. Pour the chickpea mixture into the well of the dry ingredients. Add the vanilla and maple syrup to the top of the chickpea mixture.
  5. Stir the wet ingredients into the dry ingredients until a dough forms.
  6. Gently fold the chopped dates into the dough. You may want to use your hands.
  7. Separate the dough into eighths. Then, use your hands to shape each piece of dough into either a flattened triangle or circle. Place these about an inch apart from each other on the baking sheet.
  8. Using a small cookie cutter, cut stars (or other shape) out of the fruit leather and place this on top of each scone.
  9. Bake scones for about 12 to 15 minutes or until thoroughly cooked through.

Their rich and smooth consistency satisfies the strongest of sweet tooths and the moringa makes them one guilty pleasure you may not have to feel too guilty about! Aesthetically, the earthy green tones of your favorite moringa truly accent the dark nature of the chocolate truffle. Whip these together in a time crunch, and keep them on hand. They store for up to two weeks, that is, if you can refrain from eating them all in one sitting!

Dark Chocolate Moringa Truffles

Ingredients

1/3 cup heavy cream
6 Tbsp unsalted butter
1 3/4 cup dark chocolate – chips/bar/melts
1/3 cup cocoa powder
4 Tbsp Pure Moringa Vegetable Powder

Directions

1. In a small saucepan, bring the heavy cream to a simmer. Then, add the butter and stir until melted. Next, add the dark chocolate. Stir until completely melted and smooth. Remove the saucepan from the heat. Pour the contents into a freezer friendly bowl.
2. Add in cocoa powder. Stir until smooth. If you’re looking for a real moringa kick, split the powder – using part moringa powder, part cocoa powder!
3. Allow the mixture to cool. Cover with air tight plastic wrap and refrigerate the mixture until it’s firm. The firming process should take a minimum of two hours.
4. Finally, using a melon baller or small spoon, roll the truffle mixture into 1-inch balls. Sprinkle truffles with moringa powder. Enjoy immediately or refrigerate them in an airtight container for up to 2 weeks.
