This time of year, holiday desserts are all around us. And they are oh so tempting! But many of us tend to avoid these delicious treats because of the way all that sugar makes us feel. Sure it tastes good, but the sugar hangover is real. That’s why Kuli Kuli created SuperBark. MORINGA RASPBERRY MUG CAKE

INGREDIENTS:

1/4 cup oat flour

2 tsp Pure Moringa Powder

1/2 tsp baking powder

1/2 mashed banana

2 tbsp unsweetened almond milk

6-7 fresh raspberries

Raspberry Chia SuperBark

DIRECTIONS:

  1. Mix the dry ingredients together
  2. Mix the wet ingredients together
  3. Then combine the dry and wet ingredients to make a batter
  4. Fold raspberries into the batter
  5. Then spoon into a mug or bowl
  6. Place raspberries and SuperBark on top
  7. Bake at 350F for 15-20 min or microwave for ~1min 30sec.

This past Wednesday was #NationalGlutenFreeDay. Gluten-free seems to be everywhere these days. There isn’t a restaurant out there that doesn’t have a gluten-free option now, and even most bakeries are offering gluten-free options. However, the question seems to remain if going gluten-free is a fad that will fade or if it is here to stay?

So, What is Gluten?

The answer to this question is not a simple yes or no, it’s a bit more complex than that. Let’s start off with what gluten is. Gluten is a protein that is found in wheat, rye, barley, and bulgur. In order for our bodies to utilize a protein, it must be broken down into individual amino acids. However, humans do not have the enzyme that can completely breakdown a gluten peptide chain into these individual amino acids. Therefore, every time a gluten-containing food is ingested, there are tiny tears to the gut lining. Most people do not even notice the discomfort from these tears, and some people have healthy enough gut linings that these little tears are easily repaired. 

And What is Gluten Intolerance?

However, if you are someone that experiences bloating, gas, discomfort, and even fatigue after eating gluten containing foods, then you might not be healing from these micro-tears well. These little tears are creating pain, discomfort, and inflammation in the body. Inflammation is one of the ways that our body tries to heal. This is why gluten is taken out of so many diets, to reduce the burden and inflammation that is created by eating gluten!

This is why going gluten-free can benefit people even if they do not have Celiac Disease (an autoimmune condition that is triggered by gluten). 

If you experience any of these symptoms it might be worth trying to go gluten-free for a bit to see if that offers some relief:

  • Bloating

  • Abdominal Pain
  • Headaches
  • Gas
  • Fatigue
  • Skin Problems (Psoriasis,  Alopecia, Urticaria)

No Need to Fear, Gluten-Free Baking is still here!

Now if you are feeling sad and frustrated that you won’t be able to enjoy pasta, bread, and pastries anymore, have no fear!! There are SO many great gluten-free options out there now! There are pastas made from chickpeas and lentils, bread made from rice and quinoa, the recipes are endless!

Below is a recipe for gluten-free brownies that utilize some superfood powerhouses – Organic Pure Moringa, coconut oil, almond flour, and avocado! If you are thinking this might just be the hippiest recipe you’ve ever seen, then you might just be right! However, it is packed with tons of nutrients from the moringa powder, energy from the avocado and coconut oil, all while packing tons of great flavor!

Gluten-Free Moringa Avocado Brownies

Ingredients:

  • 1 Ripe Banana
  • 1 Avocado
  • ½ cup coconut sugar
  • 2 eggs
  • 3 Tbsp coconut oil
  • ½ cup almond flour
  • ½ cup moringa powder
  • ½ cup cocoa powder
  • 1 tsp baking soda
  • ½ tsp salt

Directions:

  1. Pre-heat oven to 350F.
  2. In a stand mixer or with hand mixer, mix avocado, banana, coconut sugar, and coconut oil together.
  3. Add in 1 egg at a time until creamed together.
  4. Add almond flour, moringa, cocoa powder, baking soda, and salt; mix until combined. (Be careful when starting the mixeras you don’t want cocoa powder to go everwhere!)
  5. Line a square pan with parchment paper. 9×9 or 8×8 will work (8×8 will need to be cooked a little longer).
  6. Pour batter into the pan and spread it out evenly.
  7. Bake for 18-20 minutes, 5 minutes longer if using an 8×8 pan.
  8. Let cool for 20 minutes before slicing!

 

Enjoy with a moringa latte for an added health boost!

This Valentine’s Day, treat yourself or someone special, to a decadent and rich brownie covered in a creamy ganache frosting. These brownies are raw, vegan, and feature an extra nutritious boost from moringa!

They’re perfect to share, but so delicious that you might not want to.

This recipe is based off of the Vegan Brownies recipe by Minimalist Baker. Make sure to check out their other awesome recipes if you haven’t already!

Ingredients

Brownies: (Vegan, Raw)

  • 1 1/2 cups raw walnuts (plus more for topping)
  • 1 cup raw almonds
  • 2-3 teaspoons of Organic Pure Moringa Powder
  • 1 pound pitted dates 
  • 3/4 cup cacao powder or unsweetened cocoa powder
  • 2 Tbsp cacao nibs (plus more for topping)
  • 1/4 tsp sea salt

Ganache Frosting: (Vegan)

  • 1/4 cup almond milk
  • 1 cup dairy-free dark chocolate (chopped)
  • 2 Tbsp coconut oil, melted
  • 1/4 – 1/2 cup powdered sugar
  • 1/4 tsp sea salt

While a food processor is not 100% necessary for this recipe, it certainly does help!

Directions

Brownies :

  1. Place walnuts and the almonds in food processor and process until finely ground.
  2. Add the cacao powder, Organic Pure Moringa Powder, and sea salt to the nut mixture and pulse to combine. Transfer to bowl and set aside.
  3. Add the dates to the food processor and process until small bits remain. Remove and set aside.
  4. Add nut and cocoa mixture back into food processor and while processing, drop small handfuls of the date pieces down into the food processor or blender spout.
  5. Process until a dough consistency is achieved, adding melted coconut oil if the mixture does not hold it’s shape when squeezed together.
  6. Add the brownie mixture to a small parchment lined 8×8 dish and before pressing, add cacao nibs to mixture for extra texture. Press mixture into the pan until flat and firm. TIP : Rub a small amount of coconut oil onto your palms to prevent dough from sticking to your hands!
  7. Place brownies in freezer or fridge to chill for 10-15 minutes before cutting into squares (if adding ganache, slice after frosting!)

Ganache :

  1. Add almond milk to a mixing bowl and microwave for 45 seconds or until very warm. Alternatively, heat in a small saucepan until just simmering, then transfer to mixing bowl.
  2. Immediately add chocolate to warm milk and loosely cover. Let this sit for 2 minutes so it can melt.
  3. Add salt and stir gently to incorporate, then add melted coconut oil and use a whisk to mix. Set in fridge for 10 minutes to thicken.
  4. Remove from fridge and add powdered sugar a little at a time to thicken. Whisk again to combine. If it’s still too thin, add another few Tablespoons powdered sugar and beat until light and fluffy.
  5. Frost brownies generously with frosting, dust with a little extra moringa powder, and then top with additional raw walnuts and cacao nibs (optional). Slice into squares.
  6. Store brownies in an airtight container to keep fresh. Will keep for 3-4 days at room temperature, or in the freezer for at least 1 month.

Who doesn’t love decorating cookies during the holidays? And what if we said you could sneak a little extra nutritious goodness into a classic recipe? This moringa frosting is a beautiful and delicious way to add a little green boost to your holiday treats!

The added bonus of this recipe is that it doesn’t use any food coloring. The green color is completely natural and comes from the moringa! But that doesn’t mean you can’t try mixing it up with other flavor extracts, spices, or food coloring for some variety.

Use this recipe to decorate you favorite holiday cookies, cakes, or as a glaze for cinnamon rolls!

Moringa Superfood Frosting with Kuli Kuli

 

Ingredients

  • ½ cup powdered sugar
  • 1 tsp Organic Pure Moringa Powder
  • ¼ cup salted butter, softened (sub coconut butter for vegan option!)
  • 2 Tbsp unsweetened almond milk (any milk works!)
  • A few drops of peppermint extract (optional)

Directions

  1. In a mixing bowl, combine powdered sugar, moringa, and butter.
  2. Whisk in milk and peppermint extract (if desired)
  3. Check the consistency and add more milk or powdered sugar if necessary
  4. Decorate cookies or use as a glaze for other desserts!

Looking for something a little different to bring to the holiday table? Try our peppermint & moringa fudge for a fresh take on a classic sweet treat! This fudge is creamy, chocolate-y, and oh so delicious. And, you get the added bonus of a natural green hue from moringa.

This recipe makes a small pan of fudge that is perfect to share for an evening with friends and family or to enjoy yourself on a cozy night in (no judgement here!).

Peppermint Moringa Fudge Ingredients

Ingredients

  • 1 (14 oz.) can of sweetened condensed milk
  • 2 teaspoons Organic Pure Moringa Powder
  • 3 cups white chocolate chips
  • 1-2 teaspoons peppermint extract
  • A pinch of salt
  • Crushed candy canes for garnish (optional)

 

 

Directions

  1. Line a small baking pan with parchment paper, covering the bottom and sides of the pan. Set aside.
  2. Whisk together the moringa and sweetened condensed milk in a saucepan over medium heat.
  3. Reduce heat to low and stir in the chocolate chips until the mixture is smooth and creamy.
  4. Whisk in the peppermint extract and salt.
  5. Pour the mixture into the baking pan, gently shake the pan to level out the mixture.
  6. Sprinkle crushed candy cane bits over top of the mixture.
  7. Chill in the refrigerator 4-6 hours until the mixture is set. Serve chilled.

 

Feel free to get creative with this recipe! If peppermint isn’t your thing, try swapping out the extract flavor and garnish for different variations.

Moringa Brings the Green to These Holiday Cookies!

Nothing is as inviting or festive as a fresh batch of chocolate chip cookies holidays! I’ve been working on this vegan cookie recipe for years and I guarantee that you and your party guests will not be disappointed. They are my ideal chocolate chip cookie: crispy on the outside and soft and mushy on the inside.

In this version, I use moringa powder to add an evergreen tinge and an extra dose of wintery wonder to a holiday classic. I absolutely love them right out of the oven when the chocolate is still warm and melting, but they taste fabulous at room temperature as well!

Moringa powder gives these cookies an evergreen tinge.

And there’s and added bonus – they’re gluten-free! I’ve found that gluten-free flours tend to give the best texture and makes it super simple if you are entertaining people with different dietary restrictions. I’ve found that sweet white rice flour gives the best results, but white rice flour will work well if you can’t find the sweet white rice flour. This recipe also calls for oat flour, which you can make yourself by blending one cup of old-fashioned oats in a food processor until you form a fine powder.

Gluten-free flours give these cookies the best textures.

For the liquid, I use a blend of chickpeas and aquafaba (the liquid that comes with a can of chickpeas). All you do for this part is dump a whole can of chickpeas (liquid and all) into a food processor and blend until mostly smooth.

For the rest of this recipe, I keep the dough in one large bowl. It’s way more fun to be frolicking in the snow with your friends or munching on these cookies by the fireplace than doing a sink full of dishes. Also, you can eat the raw dough and won’t have to worry about salmonella because there are no eggs. Just be warned – the dough is very addicting!

These cookies are vegan, so you don’t have to worry about salmonella when you taste test the dough.

 

Ingredients

  • 1 cup oat flour
  • ½ cup sweet white rice flour
  • ½ cup brown rice flour
  • ¾ cup coconut or date sugar
  • 1 tsp baking powder
  • 1 ½ Tbsp Kuli Kuli Pure Moringa Powder
  • 1 (15-oz) can of chickpeas (keep the liquid!)
  • 1 tsp vanilla extract
  • 1 cup vegan semi-sweet chocolate chips + more for adding to the tops of the cookies.

Directions

  1. Preheat the oven to 350°F and line two cookie sheets with parchment paper or a silicon mat.
  2. In a large mixing bowl, stir together the oat flour, white rice flour, brown rice flour, coconut/date sugar, baking powder, and moringa powder until well combined.
  3. Form a well in the center
  4. Blend the chickpeas and their included liquid (aka aquafaba) in a food processor until mostly smooth.
  5. Pour the chickpea mixture into the well of the dry ingredients and pour the vanilla extract on top of the chickpea mixture.
  6. Stir the wet ingredients into the dry ingredients so that a dough forms. Gently fold in the chocolate chips.
  7. Using your hands, form small cookie-sized balls of dough and place them on the cookie sheet about an inch apart from each other. Flatten the balls of dough with your fingers. You might want to add a few extra chocolate chips to the tops of each cookie to make sure they have that irresistible chocolate chip cookie look.
  8. Bake the cookies in the oven for 12 to 15 minutes.
  9. Remove the cookie sheet from the oven and let cool for about 5 minutes before eating or serving.

 

Moringa gives these classic chocolate chip cookies a festive twist.

Ahh, summer at last. Tis the season for beach days, road trips, sunshine, and cold treats. Popsicles are easy to make and so refreshing on a hot day! They can cool you down, help you stay hydrated, and give you the energy you need to have the best summer ever.

Mango, moringa, and lemongrass is truly a flavor combo made in heaven for hot summer days! The sweet, juiciness of mango balances the herbal notes of moringa and lemongrass to create a flavor that is tropical and refreshing. And what’s more, this recipe couldn’t be easier. The hardest part of making these popsicles is waiting for them to freeze before you can enjoy them.

Ingredients

3 bags of moringa tea with lemongrass

4 cups of water

1 ripe mango

1 large slice of lemon

1-2 tablespoons honey (optional)

Preparation

  1. Bring your water to a boil and steep the moringa tea bags as per the directions on the package.
  2. While the tea is steeping, slice your mango into cubes. If you’re not sure how to cube a mango, check out this great instructional video! I’ve butchered many mangoes before learning this trick, it’s a life saver!
  3. Now that your mango is sliced and your tea is done steeping, remove the tea bags and mix in the honey until it is fully dissolved. Feel free to go without the sweetener or add it to taste!
  4. Squeeze the juice out of your lemon slice into the tea and give it a good stir.
  5. Fill your popsicle molds about 1/4 full of diced mango.
  6. Top off your molds with the moringa lemongrass tea and put in the freezer for a few hours. Mine took about 4 hours to freeze all the way through! Trust me, they are worth the wait.
