We all know the feeling – waking up on the wrong side of the bed, only to move immediately into your daily duties! It’s only natural that the first step is to brew your daily cup of caffeine. But then comes the crash! So what if we told you there was a way to uplift your day with natural and sustained energy? Well, meet the Moringa Latte. As you look to lower your caffeine intake in a delicious and nourishing way, this recipe is a green boost that provides the all-day vitality you just might be searching for. 

A Vanilla Oat Moringa Latte is a creamy pick-me-up that tastes similar to matcha, but more nutrient-dense and caffeine-free. Kuli Kuli’s Pure Moringa Powder and Nutpods French Vanilla Oat Creamer are a dream combo creating a rich and refreshing iced or hot latte. In recent months, Naomi Campbell and Martha Stewart called out moringa as a way to stay healthy during COVID-19 and influencers like Minimalist Baker are raving about their “caffeine-free matcha” latte recipe. So let’s get frothing! 

Latte Recipe

Ingredients:

  • 1 tsp Kuli Kuli Organic Pure Moringa Powder
  • 1 tbsp Nutpods French Vanilla Oat Creamer 
  • 8 oz warm water
  • 1 cup ice 
  • 1 tsp agave or honey (optional) 

Directions: 

  1. Add moringa powder, warm water, and your sweetener of choice (optional) to a glass. 
  2. Use a whisk, matcha brush, or frother to mix all ingredients until combined and all clumps have disappeared.
  3. Add 1 cup of ice to the glass. 
  4. Pour in a splash of Vanilla Oat Creamer until your latte reaches it’s desired creamy-ness!
  5. Enjoy  

Pro Tip: You can make this recipe a hot latte by using hot water and not adding ice cubes!

  • 1 pineapple, carved
  • 1 mango, chopped
  • 1/2 cup spinach
  • 1 banana
  • 1 avocado
  • 1/2 cup blueberries
  • 1-3 teaspoons moringa*
  • chia seeds & coconut flakes for toppings

Instructions:

  1. Carve the pineapple first, reserving the fruit for the smoothie itself. There’s entire blogs on this part of carving a pineapple. Check them out!
  2. Then, add all of the ingredients (minus the toppings and some chopped mango) to a blender and blend until smooth.
  3. Take your time arranging a few bits of the chopped mango for the decoration. Top with coconut flakes and chia seeds for a colorful array that gives the smoothie texture too!

*If you consume moringa regularly, you can put 3 teaspoons of pure moringa powder in this! If you’re new to moringa, we recommend starting with 1 teaspoon.

Smoothies are amazing for a plethora of reasons. They can be packed with fresh fruit and vegetables,  and are also nutritious for on-the-go times. There is an art to crafting a well-rounded, flavorful smoothie, so if you’re new to smoothies, stick with it. Nailing the right texture and taste takes time, but here’s a few tips from an avid moringa smoothie fan!

How to Make the Perfect Moringa Smoothie

Let’s first start with the equipment. You need a blender to make a smoothie. Investing in a powerful blender is key. I personally use a Vitamix. Though the upfront cost may be daunting, it will make all the difference, and it can also be used for other kitchen related endeavors, like nut milk. Think of a high quality blender as an investment in your health.

I typically break down a smoothie into 4 parts: fruit, greens, liquid (sometimes referred to as your base), and nutrient dense powder. By selecting one, or more, items from each category, the end result is a satisfying and nutritious smoothie.

Part one: Fruit

Fruit is what gives the smoothie its sweetness, while also adding vital vitamins to your smoothie. I always include banana as a staple in my smoothies. It’s light in flavor, high in potassium, and helps thicken the smoothie.

For even thicker smoothies, consider freezing the banana prior to adding into your smoothie, or you can add ice for a thicker consistency. Other fruits to include are blueberries, peaches, raspberries, strawberries, blackberries, cherries, acai, and pitaya (pink dragon fruit).

I typically buy frozen fruit, as it’s more cost effective and will last longer, and simply is much easier. For your smoothie, pick 2-3 fruits to add in if you’d like.

Part two: Greens

There are many great greens to choose from that will add extra nutrients, and help balance out the sweetness of the smoothie. The following are greens I’ve found work best: kale, spinach, collard greens, and chard.

I suggest adding in a small handful of one green into your smoothie. You can always adjust with time.

Part three: Liquid

Nowadays, there are so many milk alternatives to choose from. To keep things extra clean, I chose to make my own nut milks. My favorite is almond, but macadamia and cashew also taste great.

To make your own nut milk, simply take 1 cup of nuts and soak them for 2-4 hours (depending on the hardness of the nut). Then rinse them with clean water, and add them to the blender with 4 1/2 cups of water and blend until smooth.

Strain the milk through a nut milk cloth, and voila, your own nut milk! It’s best to use it up within 3-5 days of making it. Other liquids to use can be coconut milk, dairy milk, fresh juice, and even water will do.

Part four: Nutrient dense powder

This step is where your smoothies can really pack a punch. My go-to powder is Kuli Kuli Pure Moringa Powder powder. It’s nutrient-dense, and also supports sustainable moringa farming!

Moringa has 2 times the amount of protein as yogurt, 4 times the vitamin A of carrots, and 4 times more calcium than milk. Making Your Moringa Smoothie

Once you have chosen which ingredients to include from the sections above, it’s time to make your smoothie. We’ll make it easy as one step, at this point:

  1. Add all ingredients into the blender, and blend until a smooth consistency is achieved. If you like it on the thicker side, then keep an eye on it and blend it a bit less so you have some small pieces of fruit left. You can experiment to see what you like best!

If you like to get creative in the kitchen, this part is for you. I love the process of plating food and presenting it in an aesthetically pleasing way.

I typically start with a canning jar as the vessel for holding my smoothie, but whatever vessel you fancy will do. Once I pour the contents of my delectable creation into the jar, I then decide on which toppings to use for garnish. My favorite things to decorate my smoothie with are dates, shredded coconut, cacao nibs, and chia seeds.

Tropical Green Moringa Smoothie:

  • 1 banana
  • Handful of kale
  • 1/2 cup FROZEN mango
  • 1 cup coconut water
  • 1 teaspoon Moringa Powder

*For all or these recipes, add all ingredients into the blender. Then, blend until a smooth consistency is achieved. If you like it on the thicker side, blend it a bit less!

 

Moringa Banana Smoothie With Dates

 Blu-nana Smoothie:

  • 1 banana
  • 1/2 cup FROZEN blueberries
  • Handful of spinach
  • 1 cup of RAW almond milk
  • 1 teaspoon of Moringa Powder

*For all or these recipes, add all ingredients into the blender. Then, blend until a smooth consistency is achieved. If you like it on the thicker side, blend it a bit less!

 

Hot Pink Punch Smoothie:

  • 1 banana
  • 1 pack FROZEN Pitaya Plus
  • 1/2 cup FROZEN strawberries
  • 1 cup orange juice
  • 1 teaspoon moringa powder

*For all or these recipes, add all ingredients into the blender. Then, blend until a smooth consistency is achieved.

If you like it on the thicker side, blend it a bit less!

The moringa tree is traditionally used by people throughout India and Ghana as more than just a nutritious food source. The seeds, flowers, and bark are also utilized in medicines, teas, and even for hair and skin. Here are 5 ways that moringa benefits the health and look of the skin.

5 Reasons Moringa is Good for Your Skin

1. Moringa boosts skin’s natural collagen production.

Moringa is high in vitamin C which is an essential nutrient for the body to produce collagen naturally. Collagen helps to give the skin a younger look by supporting the structure of the skin. More collagen in the skin helps to increase the firmness of the skin and decrease the appearance of wrinkles. Vitamin C stabilizes collagen because it’s a cofactor for the enzyme responsible for securing and cross-linking collagen fibers.

2. Moringa can slow signs of early aging. 

While the vitamin C in moringa helps to support collagen and the look of skin externally, it also plays an important role internally as well. As the body ages, it becomes less efficient at neutralizing the free radicals that begin to build up in the body. Free radicals from oxidative stress cause damage to different organs and tissues in the body, including the skin.

That’s why increasing antioxidants is important to maintaining a youthful glow and look to the skin. Vitamin C is one of the most potent antioxidants, along with vitamin A and B, which moringa also contain. Moringa is also known for its anti-inflammatory properties which also helps to decrease oxidative stress and free radicals. 

3. Moringa can help dry or oily skin. 

Whether the skin is oily or dry, the properties in moringa can help to benefit both skin types. The high antioxidants in moringa mentioned above, helps the body switch from a state of stress to a state or repair, moving from sympathetic nervous system to the parasympathetic nervous system. This down regulation of the stress response decreases the inflammatory markers that triggers oil production. 

For drier skin, the B vitamins in moringa can help act as a natural humectant which retains and preserves moisture in the skin’s outermost layer. The oil in moringa can even penetrate into the skin tissue and bring moisture in.

4. Moringa can help with acne. 

Most breakouts are caused by sebum, an oily secretion, from the sebaceous glands mixing with dead cells and blocking pores. Since moringa can help with reducing oil production on the skin, this helps with reducing the build up that blocks the pores. In addition, moringa helps to balance the hormones and reduce the negative impacts of stress because of the high antioxidant content. Hormone imbalances and increased stress are both associated with acne.

5. Moringa can support wound healing. 

While this is not scientifically proven (yet), there are studies that point towards moringa having an effect on wound healing. We all know that when a pimple gets popped, it often gets worse before it gets better. This is because an open wound or cut on the skin leaves it vulnerable to bacteria and infection. Moringa may be able to help with wound healing because of the effect it has on collagen production.

3 DIY Moringa Skin Concoctions 

By now,  you’re probably read to open a pouch of moringa powder and get going! We offer three easy ways to use moringa at your “home spa.” Enjoy!

1. Moringa Avocado Face Mask

Moringa is abundant in vitamins A, C, E and antioxidants. Unsurprisingly, all of these healthy nutritients are also great for your skin. Create a thick, luxurious moringa face mask to feed your skin all the nutrients necessary for a natural, smooth and radiant glow.

Ingredients:

  • 1 tablespoon Kuli Kuli Moringa powder
  • 1/2 avocado, mashed
  • 1 tablespoon raw honey
  • 1 tsp. lemon juice or water

Directions

  1. Mix all ingredients together in a bowl.
  2. Apply the mask evenly on your face as a mask, gently avoiding eye area.
  3. Leave on for 15-20 min.
  4. Rinse with warm water for refreshing and nourished skin.

Some people’s skin responds very well to honey and avocado, while others have better luck with bananas and yogurt!

2. Ancient Moringa Triple Blemish Blaster

Moringa leaves used outside of consumption are known for their anti-bacterial and anti-inflammatory characteristics. Tea tree oil and honey have also been used for centuries for their anti-bacterial properties.

Most instant blemish remover creams on the market tend to dry out your skin, so the banana in this recipe helps to keep all the ingredients combined and moisturized, without drying out your face. This anti-bacterial, acne-fighting combo will keep your blemishes under control.

Ingredients:

  • 1/2 banana, mashed
    1 tablespoon of moringa powder (1 single serving packet
  • 1 tablespoon of honey
  • 2 tsp tea tree oil

Directions

  1. Combine all ingredients in a small bowl.
  2. Apply generously on problem spots.
  3. Leave on for 15-20 minutes and rinse off with warm water.
  4. Repeat as needed

This is a natural blemish blaster that not only smells good, but is also smooth and hydrating for your skin.

3. Moringa Oatmeal Exfoliating Body Scrub

Winter is coming, and along with it comes dry arms and legs. What better way to combat winter dryness than the classic soothing oatmeal scrub with the unlocked secrets of moringa to boost the vitamin E levels for your sensitive skin?

Dry and sensitive skin can be prone to inflammation, especially with frequent shaving. The added moringa contains anti-inflammatory and anti-bacterial features to help prevent red and itchy skin.

Coconut oil and oatmeal both act as an emollient to help soften while sugar exfoliates your skin.

Ingredients:

  • 1 cup old fashioned oats
  • 2 tablespoons of moringa powder (2 single serving packets)
  • 1 cup granulated
  • 1/2 cup coconut oil

Directions

  1. Process oats until flour-like or into small pieces.
  2. Mix in moringa powder and sugar.
  3. Add in coconut oil and mix until well combined.
  4. Store in an airtight container for up to 1 month. Enjoy!

As a personal chef with an eye on nutrition, I am always looking for ways to make recipes that are healthy and satisfying. My name is Katie Simmons and I’m a professional chef based in Chicago. Many of my clients love the convenience and satisfaction of baked goods, especially muffins and bread. It’s so much easier to pack a Banana Walnut muffin for their commute to work, rather than trying to eat a spinach salad.

And when it comes to kids, they are often more likely to gobble up a Green “Boo-Berry” Goblin pancake than to dive into a bowl of kale. This is one of the reasons I was so excited to come across the moringa powder. One little packet (10g) packs 3 g of fiber and 3 g of protein! Plus, there’s Vitamin A, calcium, and Iron–all essential for a healthy diet. It’s like a multivitamin in a leaf.

Super-Green Your Baking: 4 Tips for Using Moringa Powder

Essentially, what I love most about moringa is that I can “amp-up” the nutrition in my breads and muffins by simply adding it to any recipe. I’ve been using this super-green powder in my baking for a few months now. Here are a few tricks I’ve learned, for successful with Moringa powder baking.

1. Remember the color – It’s GREEN!

I’ve made muffins for kids who loved this green color, while I’ve seen adults scowl at it. You have two options here: embrace the color or hide it. If you’re embracing it, flavor your muffins with mint extract for a “Super-Minty” muffin. If you’re hiding it, use the powder in chocolatey recipes like brownies or chocolate muffins.

I love the color, and how I don’t have to add artificial dyes to my recipes in order for a visual delight.

2. Start with a little moringa

Start by substituting just 2 tbsp. of your flour with the Moringa powder. Make sure you like the taste and the texture holds up before adding more. For an entire recipe, say 12 muffins, with 2 tablespoons of moringa powder, each muffin is getting between 1/2 teaspoon – 1/3 teaspoon of moringa. That’s a great moringa serving size for kids.

They’ll get a good dose of “sneaky greens” while not being turned away from a “veggie” taste. Although if your kids love the taste of veggies, then half your work is already done! If that’s making you wonder How Often You Should Eat Moringa, Kuli Kuli offers a comprehensive article on that too.

3. Follow the Fourth 

A general rule of thumb when substituting flour is to only swap out ¼ of the mix. For example, for a recipe that calls for 1 cup of wheat flour, you can use up to ¼ cup of Moringa powder + ¾ cup wheat flour. If you add more than this, the batter probably won’t get has much rise and have the texture you want. Hence the saying “follow the fourth.”

4. Sift with the dry ingredients 

Add the moringa powder to your dry ingredient mix and sift everything together. It’s important to do this before integrating any wet ingredients, like eggs or butter.

This sifting will help ensure the powder is evenly mixed in the batter, and also help you avoid any clumping of moringa.

Now it’s time to roll up your sleeves and get baking! Here are four quick ideas to get you inspired:

For cookies, add mint extract and mini chocolate chips for “Mint Chocolate Chip Cookies.” In pancakes, add to your pancake mix with blueberries for Green Goblin “Boo-Berry” Pancakes.

In bread, add moringa to zucchini bread to amp-up the green color. In brownies, sneak into chocolate brownies. No one will know they’re getting in their daily greens while enjoying your delicious treat. Does moringa’s bitter taste surprise you sometimes? Hint: bitter is better! There are also lots of recipes that minimize the “veggie” flavor, including fruity smoothies with banana, mangoes or pineapple. So what gives moringa its strong taste, and what does it mean?

Ingredients for the guacamole dip:

Moringa Chips with Moringa Guacamole

  • 5 ripe avocados
  • 2 ripe roma tomatoes
  • 1 red onion
  • 2 cups fresh spinach, chopped and drained
  • 2 tablespoon Pure Moringa Powder (2 single serving packets)
  • ½ head of garlic, or to taste
  • 3 tablespoon lemon juice, to taste
  • Salt, Pepper to taste

Directions for the guacamole dip:

1. Dice tomatoes, red onion, and garlic into a large bowl and mix with chopped spinach.
2. Add diced avocados and mash coarsely.
3. Add Pure Moringa Powder and mix until evenly incorporated.
4. Add lemon juice, salt, and pepper to taste.
5. Chill and enjoy with moringa chips! (Moringa Chips recipe below.)

Ingredients for the moringa chips:

  • 1 pack of fresh corn tortilla (about 8-10 tortillas)
  • 1 tablespoon Pure Moringa Powder (1 single serving packet)
  • 2 cup of oil
  • Salt and pepper, to taste

Directions for the moringa chips:

  1. Slice tortillas into desired chip sizes.
  2. In a deep pan, heat oil until 350 degrees F.
  3. Fry tortilla slices until golden brown.
  4. Drain on paper towel and set aside to cool.
  5. In a large bowl, sprinkle chips with Pure Moringa Powder, salt, and pepper to taste. Toss until evenly coated.
  6. Store chips in an airtight container to prevent from going stale. Or just eat it all.

2. Moringa Creme Brulee

Sweet treat: moringa creme brulee

Creamy, decadent, delicious goodness we all know and love: Crème Brûlée. Though traditionally, flavored with vanilla, you can find a wide variety of crème brulee inspirations worldwide today. 

Ingredients:

  • 4 cup heavy whipping cream
  • ½ cup sugar
  • 6 egg yolks
  • 2 teaspoon vanilla extract
  • ½ cup granulated sugar
  • 1 tablespoon Pure Moringa Powder (1 single serving packet)
  • ½ teaspoon salt

Directions:

  1. Preheat the oven to 300 degree F.
  2. Bring the heavy whipping cream to boil and let it cool for a few minutes.
  3. Separate 6 egg yolk and whisk them for about 2 minutes until smooth.
  4. Add sugar into the egg yolk and whisk until pale yellow and smooth.
  5. Add Pure Moringa Powder and vanilla extract and mix well.
  6. Slowly pour the heavy whipping cream into the egg mixture. Whisk while pouring to prevent scrambling the egg mixture.
  7. Create a water bath by pouring hot water into a cake pan and placing the ramekins inside. The ramekins should be at least ½ submerged in hot water.
  8. Fill ramekins to ¾ full.
  9. Bake for 40 minutes. Chill for at least 3 hours.
  10. Once it’s ready to serve, sprinkle granulated sugar evenly on the surface until completely covered.
  11. Use a torch to caramelize the sugar until golden brown.
  12. Allow the sugar to cool completely before serving.

3. Moringa Banana PancakesMoringa Pancakes with Raspberries

Here is an easy and tasty way to incorporate moringa not into your morning smoothie, but into your pancakes!

Ingredients:

  • ½ cup shredded coconut
  • 1 ripe banana
  • 1 teaspoon vanilla
  • 3 tablespoon coconut flour
  • 1 teaspoon cinnamon
  • 3 teaspoon Moringa powder; or to your liking
  • 1 tablespoon carob powder
  • 1 teaspoon maca powder
  • ½ cup water
  • 1 teaspoon chia seeds

Directions:

  1. Mash all ingredients up until they resemble a batter.
  2. Heat a flat pan on the stove to medium heat, reducing heat once you have made three beautiful moringa cakes and placed them on the flat top.
  3. Cook each side for about 5 minutes, keeping an eye and ensuring that the heat is low so each cake can thoroughly cook.
  4. Flip.
  5. Once these are finished, plop them onto your favorite plate, spicing them up with fresh berries, banana and organic maple syrup. Whatever your little heart desires!

Ingredients:

For the moringa cake:

  • 1 cup cake flour
  • 1 tablespoon Pure Moringa Powder
  • 2/3 cup granulated sugar
  • 1 & 1/2 teaspoons baking powder
  • 1/3 cup unsalted butter, softened
  • 1/2 cup whole milk
  • 1/4 cup egg whites, about 2 large eggs
  • 1 teaspoon vanilla

For the matcha frosting:

  • 2 sticks of unsalted butter, softened
  • 1-1/2 cups powdered confectioner’s sugar
  • 2 teaspoons matcha powder
  • 1/2 teaspoon vanilla

Directions:

  1. Preheat oven to 350°F. Butter and dust two 4×2-inch round cake pans with flour and set aside.
  2. In large bowl, stir together flour, Pure Moringa Powder, sugar, and baking powder.
  3. Add softened butter and milk. Beat with a hand mixer on low speed until combined. Continue beating on medium speed for 1 minute.
  4. In a separate medium bowl, whisk together egg whites until frothy, just before soft peaks form. Whisk vanilla into egg whites and gradually add the egg white mixture to flour mixture, beating until well combined.
  5. Divide batter evenly between prepared pans. Bake for 30 to 35 minutes or until wooden toothpick inserted in center of cake comes out clean.
  6. Remove and cool in pans on wire rack for 5 minutes. Carefully remove from pans and leave to cool completely.
  7. To prepare and frost the cake, trim the top of cake with a serrated knife until level. Cut cake horizontally in half. Place cake bottom on cake plate, cut side up.
  8. In small, chilled mixing bowl, beat butter and confectioner’s sugar until well creamed. Add matcha powder and vanilla and mix until well incorporated.
  9. Spread the matcha frosting onto the cake bottom. Place cake top, cut side down, on-top of the frosted cake bottom. Use a small table knife to smooth any whipped cream from edges of cake. Frost top and sides with Vanilla Buttercream.
  10. Chill cake in freezer 1 hour before additional decorating or serving.

5. Banana Nut Moringa Bread

Banana Nut Moringa Bread

We have for you a nutty banana bread with a shade of green that would put the Hulk to shame. This recipe is a go-to for the over ripe bananas that no one wants to eat. We made the entire thing in one single glass loaf pan, except for one additional small bowl to melt the butter and whisk the egg.

There are countless variations to this recipe, some of which we’ve listed under the Optional Ingredients section. The most difficult part of the recipe would be smashing the bananas until smooth. Hulk Smash! Hulk Smash! 

Who doesn’t love a no clean-up, forgiving, healthy, and delicious recipe? Without further ado…

Ingredients:

  • 2-3 ripe and peeled bananas
  • 1/3 cup melted butter or oil
  • 1/3 cup of sugar
  • 1 beat egg (Hulk Destroy!)
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon or “pinch” of salt
  • 1 teaspoon baking soda
  • 1-2* tablespoon of Kuli Kuli’s Moringa Powder 
  • 1 1/2 cups of all purpose flour

Optional Ingredients (incorporated into the batter or sprinkled on top):

  • 1 tablespoon of ground flaxseed
  • 1 cup of walnuts or any type of nuts (I used walnuts in the batter and sliced almonds to top off)
  • chocolate chips (as desired)
  • fresh blueberries (as desired)

Directions:

  1. Preheat oven to 350F or for a convection oven to 325F
  2. Smash the ripe bananas in the loaf pan of your choice.
  3. Mix in the melted butter.
  4. Stir in the baking soda, salt, sugar, vanilla extract, and beaten egg.
  5. Stir in the flour with moringa powder until just incorporated (when you see no flour streaks)
  6. Top off with chocolate chips or nuts of your choice.
  7. Bake for 45 minutes – 1 hour or until done. It’s done when you stick a knife or toothpick in and it comes out clean, without wet batter stuck to it. Crumbs are okay.
  8. Smell the heavenly goodness that which is the easiest ever, Banana Nut Moringa Bread. Try not to eat it all, remember to share!

Bring this fall favorite to life this holiday season — It’s Moringa Sweet Potato Pie!

Ingredients 

Pastry Dough – Single Crust

– 1 ½ cups unbleached all purpose flour (less because of moringa powder)
– ½ tbsp Pure Moringa Powder
– 2 tbsp sugar
– ¼ teaspoon fine salt
– ½ cup (1 stick) cold unsalted butter
– ¼ cup ice cold water
– 1 tsp cold canola oil

Pie Filling

– 4 to 5 medium sweet potatoes (2 ¼ cups cooked and mashed)
– 1 cup light cream or half-and-half
– ½ tbsp Pure Moringa Powder
– ⅓ cup sugar
– ⅓ cup light brown sugar
– 3 large eggs
– 1 ½ tsp unsalted butter melted
– ½ tsp ground cinnamon
– ½ tsp ground mace
– ½ tsp pure vanilla extract
– ¼ tsp salt

Directions

1. Prepare the pastry. Roll the pastry and line a 9-inch pie plate with the bottom crust. Roll out the remaining dough for the top crust. Chill the pastry and partial-bake.

2. Preheat the oven to 400 degrees Fahrenheit.

3. Bake the sweet potatoes until tender all the way through, about 1 hour. Set aside and let cool.

4. Remove the sweet potato flesh and puree or beat until smooth.

5. Whip the eggs in a bowl until frothy. Add the sweet potatoes, sugars, Pure Moringa Powder, cinnamon, mace, vanilla, butter and salt. Mix until smooth.

6. Slowly pour the mixture into the cooled pie shell.

7. Reduce the oven temperature to 350 degrees Fahrenheit.

8. Set the pie on the center oven rack and bake for 30 minutes, turn the pie 180 degrees. Continue baking until the center is set and the edges start to rise, about another 20 minutes.

9. When ready the filling will be firm. The edges of the filling may puff up a little. You shouldn’t see much browning if any on pie filling.

10. Transfer the pie to cool. Serve slightly warm or at room temperature.

My friend told me about a kale and beet salad at Whole Foods that he loved, but felt guilty eating because the dressing was high in fat. So, I decide to make a low-fat, vegan version of that same delicious salad plus a savory moringa dressing!

Chickpeas and moringa powder make this salad a protein packed meal or snack.

To eliminate some fat, I like to use aquafaba in place of the oil. Aquafaba is the liquid that comes from a can of chickpeas. One tablespoon of olive oil has 119 calories, whereas one tablespoon of aquafaba has only 3. The chickpeas in the salad dressing also provide a creaminess factor without any added processed fats. And this is easy to custom – just add more aquafaba to the dressing if you like your dressing thinner and less if you like your dressings thicker.

I also added pure moringa powder to the dressing, which gives it a beautiful green color and also adds a earthy taste and extra doses of fiber and iron. This salad dressing is basically a fountain of superfoods.

Savory moringa dressing

The dressing goes wonderfully with kale, leeks, beets, and lentils. The slightly crispy leek slices add a great dimension of flavor and add a rather elegant twist to the whole salad. Also, if you don’t like beets, feel free to replace them with roasted sweet potatoes instead.

Ingredients

Dressing

  • 1 cup chickpeas
  • 1/4 -1/2 cup aquafaba (liquid from a can of chickpeas)
  • Generous twists of freshly ground black pepper
  • 2 cloves of garlic
  • 1 Tbsp + 1 tsp rice vinegar
  • 1 Tbsp low-sodium soy sauce or liquid amines
  • juice from half a lemon
  • 1 tsp cumin
  • 1 tsp Kuli Kuli Pure Moringa Powder

Everything Else

  • 1 large leek, sliced width wise
  • 4 small beets peeled and quartered
  • 3 Tbsp of aquafaba
  • 1 tsp freshly ground black pepper
  • 4 cups of kale chopped
  • 2 cups of cooked green lentils

Directions

  1. Preheat the oven to 400°F and line a cookie sheet with parchment paper or a silicon mat.
  2. In one large bowl, mix the quartered beets with the aquafaba and pepper until the beets are coated with the aquafaba and pepper.
  3. Place the beets on half of the baking sheet and the leeks on the other half of the baking sheet. Sprinkle the leeks with a bit of black pepper.

    Purple beets add a pop of color but feel free to use cubed sweet potatoes if you don’t like beets.

  4. Bake the beets and leeks for 20-25 minutes until the leeks are a bit crispy looking. Remove the leeks from the oven and bake the beets for another 20-30 minutes until the beets are fully cooked.
  5. While the vegetables are baking, make the dressing by blending all the dressing ingredients together in a blender.

    Savory moringa dressing ingredients

  6. In a large mixing bowl, squeeze a little bit of lemon juice over the chopped kale and massage the lemon juice into the kale for about a minute or two. This takes some of the bitterness out of the kale.
  7. When the beets and leeks are finished baking, add them to the kale along with the lentils.

    Roasted Leeks

  8. Pour in the dressing and stir everything together until well combined.
  9. Serve in big salad bowls and enjoy! 🙂

Thanksgiving is a time for family and food. If you’re conscious of your health, a vegetarian paleo stuffing recipe with a moringa twist is a great way to have all your fixings and keep it light on the carbs.

Cauliflower is a great substitute for bread and you can add all your usual vegetables, herbs and spices. This recipe has been bulked up so you can make it for a whole group.

INGREDIENTS

  • 2 heads of Cauliflower
  • 2 Onions
  • 1 heart of Celery
  • 4 medium-sized Carrots
  • 1 basket of Mushrooms
  • ½ Cup Raw Almonds
  • ½ bulb Garlic, minced
  • 4 Tbsp of Butter
  • 2 Tbsp Fresh Italian Parsley
  • 2 Tbsp Thyme
  • 1 Tbsp Moringa Powder
  • 2 Tbsp Dried Oregano
  • 1 Tbsp Sea Salt
  • 1 ½ Tbsp Black Pepper
  • 2 cups Broth
  • 2 Eggs

DIRECTIONS

Preheat oven to 350°F.

In a large food processor, pulse your onion, celery, carrots and garlic. Sautee the vegetable mix in a large pan with 2 Tbsps of butter until golden and softened.

After the vegetables are sautéed, put your cauliflower, mushrooms, almonds, herbs and spices through the food processor. You can do this in batches if your processor isn’t big enough.

Whisk together the broth and eggs. Then mix with your vegetable stuffing.

Coat your baking dish using the remaining butter. Pour in stuffing mix. Cover with foil. Bake for 45 minutes. Remove foil and continue baking for another 15 minutes.

If you’d like, feel free to top your stuffing during the last 15 minutes with chopped nuts, cheese, or more moringa!
